(All measurements are British Imperial)
• 8 Slices of Bread
> remove crusts, cut into squares roughly half an inch a side, spread in a greased medium size baking dish (I use supermarket white sliced, fresh: whatever type works for you is great)
• 10floz Milk
• 2oz Butter
> bring to the boil together, then pour over the bread. Let it soak for 15mins whilst:
• 5 Eggs
• 9oz Caster Sugar
• 0.5tsp Ground Cinnamon
> Whisk together in a reasonable sized bowl till a bit frothy and evenly combined, then stir in:
• 9oz Rhubarb, diced
> pour into the baking dish with the soaked bread, and gently stir together to make an even mix.
• 4tbsp Chopped Walnuts
> sprinkle over the top, bake in oven preheated to 160C for 50mins.
