Going in the opposite direction of my previous thread here.

I love oranges, nectarines, peaches, fresh spinach, fresh broccoli, baby carrots, yellow cherry tomatoes, sugar snap peas, kale, baked Brussels sprouts, steamed asparagus or asparagus on the grill.

Broccoli chicken is another favorite meal of mine. I also often make beans and rice with frozen veggies and sriracha.

What are your favorite healthy snacks or meals?
 
I love...... beetroot, swede,green beans, asparagus,dries fruit, mangoes,muffins, well will stop there i love love love food.
 
Broccoli, asparagus, cauliflower, strawberries, blueberries, vegetable chips, chicken, fish,
rice, squash, corn, salads, smoothies, lots of goodies.
 
My fave vegetable is peas. I like all types, shelled and still in their shells, and I will eat them as snacks. Also, yay to brussell sprouts @KagamineLen

I love pumpkin. Any, but especially when it's roasted until nice and soft. Vegetables generally are good stuff.

Beans/pulses are good, too. Chickpeas, chana dal, turtle beans - lima beans are a fave of mine (love the way they squish, almost melt, in your mouth) but I don't find them here that often. I use beans instead of meat and I can make a whole array of different stews and other meals using beans and veggies.

I'm with you on peaches @KagamineLen When you find good peaches - Mmmm. Plus mangoes and berries of various kinds. <3

Nuts and seeds are very healthy so long as they aren't over-eaten. Personally I can't think of any seeds that I 'love' (I eat them, though) but nuts are pretty yummy. Brazil nuts, almonds, walnuts (I agree @unperson) pecans, hazelnuts...okay so just all nuts :P I think cashews are one of the nicest but I usually save them for making creamy dressings using the blender.
 
I love Greek salad. All you need is tomatoes, cucumber, black olives, feta, dried oregano, salt, black pepper, lemon juice or red wine vinegar, olive oil, and sliced red onions. Some variations also include lettuce and sliced green peppers. You can serve it with crusty bread. Also goes well with fish. :)

A favorite of mine lately is steamed Swiss chard stalks until tender served with a bit of butter and a pinch of sea salt. I grow the chard in my garden.

The only vegetable I don't really care for is eggplant unless it's in a garlicky Baba Ganouj.

I love chard, too - I'm pretty sure we call it silverbeet. I cook it up with onion, garlic, and a dash of vinegar. I also agree with you regarding eggplant. Though I have had an eggplant parmagiana made for me before that I did like.
 
I appreciate the aesthetics of mushrooms - they are fascinating. But the smell, texture and taste insults me.

My partner doesn't believe me when I said mushrooms cooking smells like semen and didn't take me up on my offer to show a comparison (who says romance isn't dead?)

I personally find it disgusting when I'm near mushrooms being cooked (and my partner finds it disgusting when I keep shouting "Semen!" as she's cooking.

Honestly though, mushrooms cooking on a stove smells like a porn set on a hot summer afternoon.

Maybe that's why they look like natures penises.

I love tuna wraps! Make tuna salad, using as little mayo as possible to make it creamy and umami, but not add too much fat and calories, then stir in mustard, seasonings, and then stir in pickle relish for a sour crunch. Maybe add some lettuce and tomato to the wrap. In the words of Depeche Mode: "I just can't get enough".

Also I like to make smoothies without fruit juice. Maybe some rice milk, some banana and other fruit to make it very sweet, and then as much kale I can fit in there. If I'm feeling sort of adventurous, I might add tofu for protein, or honey or apple juice to kick up the sweetness. But not too much juice or honey. It's not good for you.

Also, I'm a big fan of dinner salads. On a large dinner plate, make a bed of seasoned rice, top it with a veggie-rich salad, top that with home-grilled teriyaki chicken, and then croutons, olives, and thousand island or honey mustard dressing. Sometimes I add sliced turkey and/or ham instead of the chicken.

I recently discovered the joys of kimchi. Korean food in general, actually. I am teaching myself how to make this stuff.
 
I love anything pickled by Korean recipes. They have entire coolers filled with pickled crunchy vegetables. Then Thai has all the custards and lotus cake, and jelly yummy flavors. Japan has those rice bowls with teriyaki and something crunchy. But local Hawaiian gotta have shamai or Chinese taro cake, and matsubi to go - of course. Maybe some mini tako salad, it's good. Pass the siracha please. Salt intake, who cares, not l. Lol
