I'm not sure how many ASD type people have digestive problems. I do, and they are very real, and steal much of my LIFE from me. I also spend a massive amount of time researching on this topic.
We have all heard "Gluten Free" and how gluten is a protein found in wheat that needs a special enzyme to be digested, that some of us cant produce (me for 1).
Yes, I know that this "GF" thing is becoming a "fad" and at some points nearly fraudulent, but that doesn't fix my angry gut. So I'm not going to argue with the fad stuff... I'm trying to be real with who I am and what I need to survive and THRIVE.
This morning I was reading a story by Dr. Gunther (creator of heart stent and many other cardiac medical inventions)... He mentioned Sour Dough Bread. I don't think I have ever eaten SDB?
Anyway in the fermenting process of regular flour the gluten is broken down! So it is not quote "gluten free" but the gluten has been sort of pre-digested in the process of making the dough.
I went on and found more stories that basically made the same claims and even one that gets really involved on how the process takes place... Like this one.

I'm a pretty health conscious guy. I like to try my best to take care of my body. I'm not some body building freak or nothing like that... I just want to give my body the best FUEL possible for the best ENERGY and least problems. So I dig into this stuff regularly.
So back to the "fad" thing... Just because Sour Dough cannot ever be labeled GF...
Is it bad for me? I have a world renowned heart surgeon who states it actually GOOD for any person to consume this type of bread because it is low glycemic, it digests well, and it helps regulate blood pressure... Who knew?
I'm going to try it and see. I never really get to have anything resembling bread. I do get waffles, pancakes, corn bread, and I have basically engineered my own pizza crust with eggs fine ground corn mill and Bob's Red Mill GF flour mix, but bread or cake - not so much.
I may hate Sour Dough Bread... I have no idea yet, but I am always open to try it before I call foul on it because its not GF.
Anyway... Please post your thoughts on this and or foods that HELP you, or make your day a living hell... : )
