I love a lot of instrumental music. You get so much emotion without pesky lyrics!!! I have recorded a few instrumentals, I find they are really fun to produce. That and I find it easier because I hate my voice so recording it usually takes SO many takes.
There are so many great bands who do instrumentals like the Australian band The Dirty Three.
 
Heh.. instrumentals seem to be a bit easier to record in general, since you're essentially leaving out a part that's quite often found in music in the form of vocals. Though it doesn't make music less.

Besides; looking at recording vocals... the prices for studiotime just to lay down vocals on some recordings seems to be quite expensive. So for amateur musicians it's sometimes an interesting option to do instrumentals, if the genre and style allows for it.

2 bands I really appreciate don't employ a vocalist at all (though one comes to mind using a few samples of speech here or there)


 
My friend, Ben is in a band called Versa. They do instrumental music. I love their track called 'Going over the Alex Fraser Bridge' It actually sounds like going over a large car bridge - so cool.

Anyway I would post it but pretty much impossible with my phone.

I'm not sure if this technically counts as an instrumental, i'd say so as the vocals in it are minimal and there are no lyrics:

Here's a neat instrumental tune I discovered recently, from The Youngbloods' 1969 album, Elephant Mountain. The voice you hear at the beginning is that of producer and country music legend Charlie Daniels. The music starts about 25 seconds in.

 
I LOVE instrumental music. I have too many favorite pieces to choose from and post on here, so I'll say that some of my favorite artists are David Lanz, Simon Daum, Paul Cardall, Ryan Farish, Hammock, Qualia, Port Blue, and Brian Crain and you can look them up on YouTube or wherever if you want. I also love soundtracks, especially anime soundtracks.
