Yet another thing I haven't tried. I'm missing out on so much food apparently. So it's macaroni with cheese on it?
Something about cheese on top of macaroni sounds a little odd. Something about the texture and consistency of macaroni makes me think it doesn't work together with cheese. But I know it's very popular so I should try it.
What differentiates Southern Mac and Cheese from other styles?Something I am craving right now is some Southern Mac and Cheese.
Breadcrumbs on top, chiles mixed in, often they also throw in onions but due to my allergy, I make it without those. What differentiates Southern Mac and Cheese from other styles?
My mother was born and raised in Louisiana. She made good mac & cheese, but
I don't know anything about it that made it 'southern.'
That sounds more Southwestern than Southern.Breadcrumbs on top, chiles mixed in, often they also throw in onions but due to my allergy, I make it without those.

I think of southern mac & cheese as first making a roux with butter and flour, add half and half and a can of evaporated milk for the liquid, some onion powder and garlic powder, cayenne and black pepper, grated cheeses (sharp cheddar, mozzarella and pepper jack), al dente macaroni pasta, all mixed together in a casserole dish, topped with breadcrumbs drizzled with melted butter, baked in the oven till bubbling hot.
