Something I am craving right now is some Southern Mac and Cheese. Forget Kraft and it's Satanic Day Glow appearence.

Yet another thing I haven't tried. I'm missing out on so much food apparently. So it's macaroni with cheese on it?

Something about cheese on top of macaroni sounds a little odd. Something about the texture and consistency of macaroni makes me think it doesn't work together with cheese. 🤔 But I know it's very popular so I should try it.

The cheese is melted.
Not just grated cold cheese on macaroni.

I selected "other" as well as other options because I sometimes make lobster mac and cheese. It's delicious, melty, creamy, and rich. That Kraft box stuff is evil.

What differentiates Southern Mac and Cheese from other styles?

My mother was born and raised in Louisiana. She made good mac & cheese, but
I don't know anything about it that made it 'southern.'

Breadcrumbs on top, chiles mixed in, often they also throw in onions but due to my allergy, I make it without those.

Homemade macaroni and cheese is definitely the way to go. Any mac and cheese that isn't in a box, really.

I've lived off too much of the box and kraft stuff growing up. I'd prefer to not do that again.

I made a mean Mac and cheese with three types of cheese and bread crumbs sautéed in butter and garlic. This is made in the home oven.

But the Mac and cheese I loved the most came out of a sealed vacuum packed bag, eaten by the river. It is freeze dried and you just add water and stir and seal it up. Another stir. In about 20 minutes you have a delicious meal.

Supplement with brisk Canadian air, watch the river flowing by and listen to the geese migrating. :)

I think of southern mac & cheese as first making a roux with butter and flour, add half and half and a can of evaporated milk for the liquid, some onion powder and garlic powder, cayenne and black pepper, grated cheeses (sharp cheddar, mozzarella and pepper jack), al dente macaroni pasta, all mixed together in a casserole dish, topped with breadcrumbs drizzled with melted butter, baked in the oven till bubbling hot.

Speaking from before my stomach problems started:

I like vegan versions of macaroni and cheese. There were some frozen and ready made kinds I’ve had that were good. Some spicy kinds are really good, too. I think I’ve had it some restaurants, too. I’ve never tried making it homemade myself, but I think it would be good to try.

I like Kraft's shaped kind. Yes, I know, I eat like a child. I've always sworn the shaped kind tastes better. xD

But seriously. A good majority of the ingredients you listed off, are all things my Uncle uses alot.

It's also making me hungry for homemade mac and cheese, despite the fact that we are going to have lamb chops, with mint jelly, today for dinner. With cauliflower 'potato' salad and a regular salad on the side.

Kraft. From the box. It’s not real cheese. Probably not real noodles. And it definitely causes cancer. But who cares, right?

Lobster mac and cheese is my favorite.
Some restaurants make a good regular mac and cheese.
For convenience I like the boxed refrigerated types you can heat in the microwave.
Main Street Bistro is my favorite of this type.
I like to add some crumbled microwave bacon on top.
