I believe that cholesterol and certain saturated fats are very, very good for you. They help build the myelin sheath that creates new pathways in the brain and it's really good for your endocrine system. It's the refined carbs and trans fats that are bad for you.
Every native culture on earth has a tradition of eating offal and fat or blubber. Organ meats, unrefined vegetable fats, and animal fats are so good for you.

I tend to agree with you. The medical community has radically changed their old advice about avoiding animal fats in the last 10 years.
Offal makes the best sausage. I like chicken liver (no one else in my family does) so I sometimes cook livers for myself and eat them over rice, or incorporate the liver into a Cajun dish called "dirty rice", or I make a liver pate to smear on toast or crackers. Great source of protein and iron. I can't bring myself to eat sweetbreads, though. Something about eating thymus glands is gross to me. I also like beef tongue, especially on a sandwich or taco. My family gags when I cook it for myself, just like they gag when I eat sardines straight from the can or herring pickled in cream sauce. I am an adventurous eater and eat to please myself. I'm pretty darned healthy at age 67 despite or maybe because of what I eat.
