Yes. I found a recipe for kimchi grilled cheese, now l have to try it. You put it in between cheese on either side. Also you cook down the kimchi, so that it isn't soggy. Then add it. This person used American cheese.
 
OH YES! My favorite grilled cheese sandwich is extra sharp cheddar on rye (or whole wheat) bread with 2 thin tomato slices (sometimes crispy bacon). The tomato and bacon must be inside the sandwich when it is cooked, and the sandwich must be pressed while cooking (similar to a Cuban sandwich). It MUST be well done, crispy and dark golden brown, preferably cooked in butter in a cast iron pan.

Grilled cheese is one of those things that I used to love so much, but I’ve totally lost my taste for it. Really dislike it now. Weird.
 
Colby Jack, dipped in Tomato Soup or Cream of Mushroom Soup... Not much finer than that.

For my grilled cheese sandwiches, I use Colby-Jack, and Swiss Cheese on sourdough. And a generous portion of butter on the sourdough.
 
So I like an 'elevated' grilled/toasted cheese using sourdough or French breads, and a mix of cheeses, like gouda, cheddar, edam, red Leicester, provolone, etc...and sometimes some prosciutto, schinkenspeck, etc.
 
I use mayonnaise instead of butter to make cheese toast. Smear mayo, crust to crust, on the outside of the bread slices instead of butter. It browns the bread better than butter. When I flip the cheese toast over in the skillet to brown the second side, I cover the toast with a lid or a domed bowl to hold in the heat and really melt the cheese.

Cheese toast is great for breakfast.

My son tried to make cheese toast on top of the light bulb in his bedside lamp when he was about 6 years old. Nearly set his bedroom on fire and I had to throw away the lamp which had burned cheese encrusted on it.
 
I like it to be pretty basic. White bread, nicely toasted and crisp, melty American cheese, with a cream of tomato soup. It's basically a deconstructed pizza. Yum!
 
My go to is quesadillas using corn tortillas. To me, the aromatic corn and cheese is heavenly.

Plus, my body treats corn as a whole grain and it does not spike my blood sugar.
 
With American "cheese," please! But please don't make it so greasy that my hands get all slimy!
And don't you dare put mayonnaise on it. Mayonnaise really weirds me out!

And I'll have a large glass of chocolate milk on the side!
 
Great, after reading this post, now l need grilled cheese, with tomato soup. And l need sourdough for super crusty bread.
