I do not like Pumpkin Spice in my house...

I grind my own flour, too, sometimes, in my coffee grinder. It's cheaper for me to buy the grains than the flour (I always make my own oat flour, because it's 1/3 -1/4 the price of a bag of pre-milled flour) and for some things (like red lentil flour) I only need a little bit and/or don't know where I'd buy it.

I can't eat any of the ancient wheat anymore, but I always liked spelt.

I make my own biscuit mix. It might help some of you who are gluten intolerant to make your own biscuit mix out of gluten free flours. I use the biscuit mix to make a whole lot of different things besides biscuits. You could probably make donuts out of it too. I saw on the internet that they have donut pans so you can bake them in the oven also, so that would save on calories and fats too.

I used to make my own English Muffins out of sourdough mix. They were pretty good, although different than the store kind.
 
Have done it for years, as the only flour available was wheat flour. Seemed too as if any wheat flour remained on the shelves in the stores for a long time. Haven't seen lentil flour anywhere, can now buy soy, quinoa, kamut, corn and oat flour in small amounts. But I'd rather just grind it and mix it myself.

As for the pumpkin spice muffins, they are pretty sweet, so I guess if you have no real choice and can't make them yourself, then some people are stuck with Tim's. ¯\_ツ_/¯ Which lots of people seem to like, obviously not you or I. Tim's donuts and muffins are no longer freshly made on the premises. They are brought in frozen.

When I was a kid one of my relatives was a baker at Tim Hortons...I got a lot of free donuts, and they were awesome. The frozen ones, as I recall, are just not the same at all.

That's cool -- I wondered about that, if there were something to bake them in the shape of a donut for if you were not keen on carefully sculpting them into pretty rings. (Or simply not successful at it, or if you ended up with batter instead of dough.)

I would definitely bake donuts....not because I worry about my fat intake but because I worry about setting my kitchen on fire.
 
I had my first Pumpkin Spice Latte of 2017 last week and also the new Caramalized Pecan Latte the following day. Both were really nice. I was a bit disappointed with not having a very full cup the second day because they left too much room for whipped cream than usual. They should of just filled it right up. The cream would of still been balanced on top... oh well.
