What was the last thing you cooked?

I'm making chicken spaghetti for my daughter. She and her kids all have flu. I'll put it on her porch because I don't want to be exposed to any more contagious illnesses. Somehow her husband has avoided getting it but he has to go to work and help with all the "patients" when he's home so I'll help out with some food that they can heat in the oven.

Interesting. With traditional tomato-based sauce? Sort of like chicken cacciatore? A dish my mother would serve the family on occasion. I came to enjoy that one a lot.

It's more like chicken alfredo with lots of cheese. The original recipe calls for a can of Rotel and canned cream of mushroom soup. I omitted the Rotel because it's too spicy for little kids to eat, and I make my own roux with butter, flour, chicken stock and a little milk instead of using canned soup. It's an old recipe from the 1950s, the kind of recipe you'd find in church or community cookbooks. It freezes really well, too, and can be cooked in a low oven even when it is frozen solid.

That sounds amazing....love alfredo sauce too.
 
I just made jalapeño poppers for breakfast. They're in the oven now. My Valentine's Day gift to hubby. (Yeah, we've been married a long time and give each other unusual things for holidays.)
It "feels" like a breakfast food with bacon, cheese, onions, cilantro, and fresh green peppers. ;)

I cut whole jalapenos lengthwise to make two halves, scrape out the seeds and membranes, put a cilantro leaf in the bottom of each one, then a sliver of green onion, topped with cheddar cheese, and wrap each one with a thin slice of bacon, secured by a toothpick on each end to hold the bacon in place. Put them on a rack over a sheet pan lined with a piece of parchment paper so the heat can circulate and the bacon fat drips below onto the parchment paper. 300-degree F oven for about an hour till the bacon is thoroughly cooked, the fat has rendered out, and the cheese is melted.
 
This did not involve cooking, but for dinner tonight, I had a salad in a bag kit that was loaded with several different veggies and a vinaigrette dressing, along with some seeds to provide protein. The whole bag was 450 calories. I am fully satisfied, although I was disappointed to read that the dressing had some refined sugar in it. Not a lot, but enough to be noticeable. Next time I use a kit like this, I will throw the dressing away and use one of my healthier bottled options.
 
Grits for breakfast. I use half water and half milk to cook them. Toss in a pat of butter and/or some grated cheese and lots of black pepper when it is ready to eat.
 
Pasta salad. Husband won't eat it, but I like having something pre-made and ready to eat in the fridge. I can get a bowl of it whenever I'm hungry and don't want the hassle of making something.
 
Dirty salsa, which means l made salsa , then chopped hardboiled eggs and tossed in, added avocado, and Sriracha mayo sauce and scarfed it down with healthy tortilla chips. l did have grits and grated cheese for snack tonite, along with some chocolate eggs.
