What was the last thing you cooked?

I made Icelandic Rye Bread this morning. It's dense and mildly sweet, good with pickled things, smoked salmon, cream cheese, etc.

3 cups organic medium rye flour
1-1/4 tsp Kosher salt
2 tsp baking powder
1/2 tsp baking soda
1-1/3 cups buttermilk
1/3 cup honey
1/3 cup molasses

Preheat oven to 325 degrees F
In a large bowl, whisk together all the dry ingredients.
In a small bowl, whisk together all the wet ingredients.
Pour the wet ingredients in with the dry ingredients and stir to combine everything.
Pour the batter into a small lightly greased loaf pan and smooth out the top so it is even.
Bake for 40-45 minutes, until golden brown.
Remove from oven, remove from the loaf pan, and put the bread loaf on a cooling rack.
Cool completely before slicing thinly and serving with butter or your favorite savory toppings.

It is very easy and tasty.

Mmmm I haven't baked bread in a good long while. We're out of bread. I might just make this.

Does it not need kneading? I see whisk, but not knead.

No kneading needed. It's a quick bread, not a yeast bread. The baking soda and baking powder, along with the buttermilk, makes it rise while it bakes in the oven.

I make yeast breads every week, mostly French baguettes which do require kneading to develop the gluten, and a handy "no knead white sandwich bread" recipe that is very easy.

I have a stand mixer with a dough hook to do the kneading for me.

For my daughter before she went to work today:

A simple breakfast sandwich consisting of a buttered English muffin and two eggs over easy.

A little cup of applesauce.

Hot cocoa.
 
My daughter is going on a road trip tomorrow morning, so I made a special dinner. I call it "Ikea at Home".

Swedish Meatballs
Gravy
Mashed potatoes
Peas
Cranberry Sauce
Salad
Naan Bread

Swedish Meatballs:

1 lb turkey burger
1 lb ground pork
2 eggs
1/4 c milk
1 cup flour
1 cup bran
2 tsp onion powder
1 tsp garlic powder
2 tsp salt
1 tsp pepper

Schmush that stuff up in a rubber banded plastic bag until it's all uniform.

Put aluminum foil on two oven pans.

Roll out the meatballs to about 1.5 inch thick.

Lay them on the foil. Make sure they don't touch each other or they won't cook through.

Bake at 400 degrees for 20 to 30 minutes.

Top the meatballs and mashed potatoes with lots of good homemade gravy. Serve peas, salad, cranberry sauce and bread on the side.

(The only reason I added flour and oat bran is because I ran out of bread crumbs. I added flour, but the mix was still too wet. So I also added bran to bulk it up and simulate the bread crumb texture. If one adds 1 cup of bread crumbs, the flour and bran can be omitted).

Do you put avocado into the batter/mixture?
If so, would love the recipe.
You can either blend the avocado and banana together
with the dry ingredients, or just blend the avocado with
the wet ingredient (milk, egg) and slice the bananas into
coins on the individual pancakes right after you put
batter on pan.
 
Did up some pasta with a quick cheat sauce. The cheat sauce is some hamburger, diced bell peppers, mushrooms, onions, pepper and garlic for spices and then just add a couple cans of condensed tomato soup. I had meant to take an after picture but forgot and there are no leftovers

Clam Chowder with mixed wild greens

1 10 oz can of clams, with the broth
1/2 stick of butter
1/3 cup flour
2 cups milk
1 cup chopped fresh greens
1/2 cup ham, chopped into tiny cubes
to taste: salt, onion powder, ginger, dill, and Taiwanese fish sauce (or soy sauce)


In a small soup pot, melt the butter. Sautee the clams with the broth, the greens, and the ham all together, until beautifully soft, warm, and glistening.

Next, whisk in the flour to make a roux. Stir quickly until bubbling. Should only take a few seconds.

Pour in the milk, stirring constantly until boiling. Turn down heat. Continue stirring frequently so the soup doesn't scorch the bottom of the pot.

It's done when the soup thickens.

Allow to cool. Season to taste with above seasonings until it's the bombest clam chowder you ever ate.


Hints:

(ginger sounds weird here, but just a pinch, not enough to taste, really brings out and completes the classic clam chowder flavor).

(If you don't do shellfish or ham, you can make this with any frozen white fish. Cod is especially good, and makes a perfect mock clam chowder.)

Someday you've gotta try an avocado smoothie. Apple juice, milk, avocado, banana. I tried my first one years ago at a Vietnamese sandwich shop. Wow they're good!
 
Quick Swai Chowder (keto friendly)
(Tastes just like New England clam chowder)

In a big pot, melt 1/2 stick of butter. Fry up 3 med-large fillets of your favorite white fish, and about 1 cup of chopped greens.

Once it's all cooked through, stir in 1/3 cup flour to make a roux.

Add 2 cups of milk. Stir til combined. No lumps.

Add 2 t salt, 1 T onion powder, 1 T dill, a pinch of ginger, and a splash of Taiwanese fish sauce or soy sauce.

Simmer, stirring often, until all thickened.

Adjust seasonings to taste.

Serves 2 big bowls, or 4 small.

Twas my breakfast.

I've taken to eating a lot of sausages lately because they're such good value at the moment. Woolworths sells 1.8 Kg packs of barbecue sausages (beef) for $10. In US terms that's about $1.50/lb.

When I first bought some I was dubious, but they taste great and the have surprisingly little fat in them. I don't bother frying them in the traditional manner, I just put 4 at a time in the flat sandwich toaster. That way they cook really quickly and make very little mess. I don't bother making proper meals, I just eat 4 at a time like a snack item. Squirt a bit of tomato sauce over them, can't go wrong.

I've had a meatball fixation lately.

I have a meatball soup recipe that uses a pound of ground chicken or turkey, half a cup of crumbled feta cheese, half a cup of rolled oats or Panko breadcrumbs, and salt and pepper to make the meatballs. I brown the balls in a little neutral oil like avocado oil and set them aside while I cook some onion, garlic and red pepper flakes in the same pot, then return the balls to the pot and add 4 cups of chicken stock, zest of a lemon, and simmer until meatballs are completely cooked. Stir up the fond from the bottom of the pot to get that good flavor. Add 4 cups of fresh spinach and simmer just a few minutes till it wilts. Serve with lemon wedges and fresh basil. It's one of my favorite soups - lemony, low fat, filling.

You could cook some onions and bell peppers to go with that. Not sure if you can grill them on the same cooking device but it sounds like you could do it in the oil left behind after you cook the sausages. Eat it on a bun!
